Ingredients
  

For the cake
  • 3 large large eggs Make sure they are at room temperature for better mixing.
  • 1 cup 200g sugar
  • 1/2 cup 120ml milk
  • 1/2 cup 120ml vegetable oil or melted butter Either can be used.
  • 1 tablespoon vanilla extract
  • 2 cups 250g all-purpose flour Sifted with other dry ingredients.
  • 1 tablespoon baking powder
  • 1 pinch salt
For the cream filling
  • 1 can 14 oz sweetened condensed milk
  • 1 cup 240ml heavy cream Whipped until stiff peaks form.
  • 1/2 cup coconut milk Optional for extra richness.
For the caramel topping
  • 1 cup sugar For caramel.
  • 1/2 cup heavy cream For caramel.
  • 1 tablespoon butter For caramel.
  • 1 pinch salt For caramel.
Optional toppings
  • to taste Shredded coconut or crushed nuts Optional topping.

Method
 

Preparation and Baking
  1. Preheat your oven to 350°F (175°C). Grease and flour a cake pan.
  2. In a large mixing bowl, beat the eggs and sugar until light and fluffy.
  3. Gradually add milk, vegetable oil (or melted butter), and vanilla extract, mixing until well combined.
  4. In a separate bowl, sift together the flour, baking powder, and salt. Gradually add this dry mixture to the wet mixture, mixing until just combined.
  5. Pour the batter into the prepared cake pan and bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
Cream Filling and Caramel Topping
  1. While the cake is baking, prepare the cream filling by whipping the heavy cream until stiff peaks form, then fold in the sweetened condensed milk and coconut milk if using.
  2. For the caramel topping, combine sugar, heavy cream, butter, and salt in a saucepan over medium heat. Stir until the sugar has dissolved and the mixture is smooth. Allow to simmer for a few minutes until thickened.
Assembly
  1. Once the cake has cooled, slice it in half horizontally and spread the cream filling between the layers.
  2. Drizzle the caramel topping over the cake and top with shredded coconut or nuts if desired.
