- Heat the oven to 350°F (175°C) and grease a donut pan well.
- In a mixing bowl, whisk together the cottage cheese, mashed banana, eggs, and honey until smooth and creamy.
- Stir in the flour, oats, baking powder, cinnamon, and grated carrot until well combined.
- Let the batter rest for 2 minutes to soften the oats.
- Spoon or pipe the batter into the prepared donut pan, filling each mold about three-quarters full.
- Smooth the tops lightly for even baking.
- Bake for 14 to 18 minutes, or until set and lightly golden.
- Allow cooling for a few minutes before serving warm.
Notes
These donuts can be served with honey or yogurt. Adding nuts or seeds provides a nice crunch. Store in an airtight container at room temperature for up to three days, refrigerate for a week, or freeze for three months.
