  • 1 cup cottage cheese Use low-fat or full-fat based on preference.
  • 1 ripe banana mashed Make sure the banana is ripe for best sweetness.
  • 2 pieces eggs
  • 1/4 cup honey Adjust sweetness as needed.
  • 1 cup flour Gluten-free flour can be used.
  • 1/2 cup oats
  • 1 tsp baking powder
  • 1/2 cup finely grated carrot
  • 1 tsp cinnamon Consider adding nutmeg for extra flavor.

Method
 

Preparation
  1. Heat the oven to 350°F (175°C) and grease a donut pan well.
  2. In a mixing bowl, whisk together the cottage cheese, mashed banana, eggs, and honey until smooth and creamy.
  3. Stir in the flour, oats, baking powder, cinnamon, and grated carrot until well combined.
  4. Let the batter rest for 2 minutes to soften the oats.
  5. Spoon or pipe the batter into the prepared donut pan, filling each mold about three-quarters full.
  6. Smooth the tops lightly for even baking.
  7. Bake for 14 to 18 minutes, or until set and lightly golden.
  8. Allow cooling for a few minutes before serving warm.

Notes

These donuts can be served with honey or yogurt. Adding nuts or seeds provides a nice crunch. Store in an airtight container at room temperature for up to three days, refrigerate for a week, or freeze for three months.
