Cooking Pasta
- Cook spaghetti according to package instructions until al dente.
Cooking Bacon
- In a pan, cook bacon or pancetta over medium heat until crispy.
Mixing Ingredients
- In a bowl, whisk together eggs, grated Parmesan cheese, and black pepper.
- Once the pasta is cooked, reserve some pasta water and drain the rest from the pot.
- Quickly mix the hot pasta with the crispy bacon, then remove from heat.
- Stir in the egg mixture, adding reserved pasta water as needed to achieve a creamy texture.
Serving
- Finish with additional Parmesan cheese and black pepper to taste.
Notes
Serve hot, with extra Parmesan and black pepper. Great with a green salad or garlic bread. Store leftovers in an airtight container and consume within 1-2 days. Reheat with a splash of water or olive oil.
