Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together the softened butter and brown sugar until smooth.
  3. Beat in the egg and vanilla extract until well combined.
  4. In another bowl, whisk together the flour, baking soda, salt, and cinnamon.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until combined.
  6. Roll the dough into balls, then roll each ball in granulated sugar.
  7. Place the cookies on a baking sheet lined with parchment paper.
Baking
  1. Bake for 10-12 minutes or until the edges are lightly golden.
  2. Let them cool for a few minutes on the baking sheet before transferring to a wire rack to cool completely.

Notes

These cookies are best served warm. You can add nuts or chocolate chips for extra flavor, and different spices like nutmeg or ginger for a unique twist.
