Ingredients
  

For the base
  • 3 tablespoons olive oil
  • 8 ounces feta cheese
  • 1 pound cherry tomatoes
  • 1 teaspoon Italian seasoning
  • Salt (to taste)
For the pasta
  • 8 ounces pasta
  • 1 cup cooked diced chicken
  • 3 tablespoons Buffalo wings sauce I used Frank's Red Hot
  • 2.5 cups stock (vegetable or chicken)

Method
 

Oven Method
  1. Preheat your oven to 400°F (200°C).
  2. In a baking dish, add olive oil, feta cheese, cherry tomatoes, Italian seasoning, and salt. Toss to combine.
  3. Bake for about 30 minutes or until the tomatoes are blistered and the feta is soft.
  4. While it bakes, cook the pasta according to package instructions.
  5. Once the baking is done, mash the feta and tomatoes together with a fork.
  6. Stir in the cooked pasta, chicken, and Buffalo sauce. Add stock to reach your desired consistency.
  7. Mix well and serve hot.
Instant Pot Method
  1. Set your Instant Pot to sauté mode and add olive oil.
  2. Add cherry tomatoes, feta cheese, Italian seasoning, and salt. Cook for a few minutes until tomatoes are softened.
  3. Add pasta, stock, cooked chicken, and Buffalo sauce. Stir to combine.
  4. Seal the lid and set to manual high pressure for 4 minutes.
  5. Release pressure and stir everything together before serving.
Air Fryer Method
  1. Preheat your air fryer to 400°F (200°C).
  2. In an air fryer-safe dish, combine olive oil, feta cheese, cherry tomatoes, Italian seasoning, and salt.
  3. Air fry for about 12-15 minutes, or until tomatoes are soft and feta is melted.
  4. Cook pasta separately and then mix it with the feta mix, chicken, and Buffalo sauce. Stir in stock as needed.

Notes

For a creamier sauce, mix in a splash of heavy cream or milk after baking. You can add vegetables such as spinach or bell peppers for extra nutrition and flavor.
