Method
Oven Method
- Preheat your oven to 400°F (200°C).
- In a baking dish, add olive oil, feta cheese, cherry tomatoes, Italian seasoning, and salt. Toss to combine.
- Bake for about 30 minutes or until the tomatoes are blistered and the feta is soft.
- While it bakes, cook the pasta according to package instructions.
- Once the baking is done, mash the feta and tomatoes together with a fork.
- Stir in the cooked pasta, chicken, and Buffalo sauce. Add stock to reach your desired consistency.
- Mix well and serve hot.
Instant Pot Method
- Set your Instant Pot to sauté mode and add olive oil.
- Add cherry tomatoes, feta cheese, Italian seasoning, and salt. Cook for a few minutes until tomatoes are softened.
- Add pasta, stock, cooked chicken, and Buffalo sauce. Stir to combine.
- Seal the lid and set to manual high pressure for 4 minutes.
- Release pressure and stir everything together before serving.
Air Fryer Method
- Preheat your air fryer to 400°F (200°C).
- In an air fryer-safe dish, combine olive oil, feta cheese, cherry tomatoes, Italian seasoning, and salt.
- Air fry for about 12-15 minutes, or until tomatoes are soft and feta is melted.
- Cook pasta separately and then mix it with the feta mix, chicken, and Buffalo sauce. Stir in stock as needed.
Notes
For a creamier sauce, mix in a splash of heavy cream or milk after baking. You can add vegetables such as spinach or bell peppers for extra nutrition and flavor.
