Wet Ingredients
  • 1 cup unsalted butter, softened Ensure butter is softened for easier mixing.
  • 1 1/4 cups brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt Reduce to 1/4 teaspoon if using salted butter.
Add-ins
  • 1 cup caramel bits You can experiment with different types of caramel bits.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth.
  3. Beat in the eggs and vanilla extract.
  4. In another bowl, whisk together the flour, baking soda, cinnamon, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the caramel bits.
Baking
  1. Drop rounded tablespoons of dough onto a baking sheet lined with parchment paper.
  2. Bake for 10-12 minutes, or until edges are lightly golden.
  3. Allow cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

These cookies are best served warm, paired with milk or coffee. Store in an airtight container at room temperature for up to a week or freeze for up to three months.
