  • 1 cup butter, softened Make sure your butter is softened, but not melted.
  • 3/4 cup brown sugar Packed down for best results.
  • 1/2 cup granulated sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon Optional: sprinkle some cinnamon sugar on top before baking for extra flavor.

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth.
  3. Beat in the egg and vanilla extract until fully combined.
  4. In a separate bowl, whisk together the flour, baking soda, salt, and ground cinnamon.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Drop tablespoon-sized portions of dough onto ungreased baking sheets.
Baking
  1. Bake for 10-12 minutes or until the edges are lightly golden.
  2. Let the cookies cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely.

Notes

These cookies are wonderful on their own but can also be served with a glass of milk or a cup of tea. For an extra special treat, pair them with vanilla ice cream for a delicious dessert. Store in an airtight container at room temperature for up to a week, or freeze for up to three months.
