Ingredients
  

Vegetables
  • 2 cups broccoli florets
  • 2 cups cauliflower florets
Cheese Mixture
  • 1 cup cottage cheese Can substitute with Greek yogurt.
  • 2 large eggs
  • 1 cup shredded cheddar cheese Can use mozzarella or feta for flavor variation.
Spices
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper To taste.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large pot, steam the broccoli and cauliflower until just tender, about 5 minutes.
  3. In a mixing bowl, combine cottage cheese, eggs, garlic powder, onion powder, salt, and pepper.
  4. Stir the steamed vegetables into the cheese mixture until well coated.
Baking
  1. Transfer the mixture to a greased baking dish and spread evenly.
  2. Sprinkle the shredded cheddar cheese on top.
  3. Bake for 25-30 minutes, or until the cheese is golden and bubbly.
  4. Allow to cool slightly before serving.

Notes

Serve warm as a side dish or light main course. Great with a green salad or alongside grilled chicken or fish. Add sour cream or fresh herbs for extra flavor.
