Preparation
- Preheat the oven to 350°F (175°C).
- In a large pot, steam the broccoli and cauliflower until just tender, about 5 minutes.
- In a mixing bowl, combine cottage cheese, eggs, garlic powder, onion powder, salt, and pepper.
- Stir the steamed vegetables into the cheese mixture until well coated.
Baking
- Transfer the mixture to a greased baking dish and spread evenly.
- Sprinkle the shredded cheddar cheese on top.
- Bake for 25-30 minutes, or until the cheese is golden and bubbly.
- Allow to cool slightly before serving.
Notes
Serve warm as a side dish or light main course. Great with a green salad or alongside grilled chicken or fish. Add sour cream or fresh herbs for extra flavor.
