  • 4 large eggs
  • 1 cup diced bell peppers
  • 1 cup diced onions
  • 1 cup shredded cheese (cheddar or your choice) Use your preferred type of cheese.
  • 4 large tortillas
Seasoning and Extras

  • to taste pepper

  • optional avocado For serving
  • optional sour cream For serving

Method
 

Preparation
  1. In a bowl, crack the eggs and beat them well. Add salt and pepper to taste.
Cooking
  1. Heat a skillet over medium heat and add the diced onions and bell peppers. Cook until soft, about 3-4 minutes.
  2. Pour the beaten eggs into the skillet. Stir frequently until the eggs are fully cooked.
  3. Remove the skillet from heat and sprinkle shredded cheese on top of the egg mixture, letting it melt slightly.
Assembly
  1. Take a tortilla and spoon some of the egg mixture into the center. Roll it up tightly.
  2. Repeat with the remaining tortillas and filling.

Notes

Store leftovers in the fridge for up to 3 days. You can freeze them for later. To reheat, microwave or bake until heated through.
