Preparation
- In a bowl, crack the eggs and beat them well. Add salt and pepper to taste.
Cooking
- Heat a skillet over medium heat and add the diced onions and bell peppers. Cook until soft, about 3-4 minutes.
- Pour the beaten eggs into the skillet. Stir frequently until the eggs are fully cooked.
- Remove the skillet from heat and sprinkle shredded cheese on top of the egg mixture, letting it melt slightly.
Assembly
- Take a tortilla and spoon some of the egg mixture into the center. Roll it up tightly.
- Repeat with the remaining tortillas and filling.
Notes
Store leftovers in the fridge for up to 3 days. You can freeze them for later. To reheat, microwave or bake until heated through.
