Ingredients
  

For the crust
  • 2 cups graham cracker crumbs
  • 1/2 cup melted unsalted butter
  • 1/4 cup granulated sugar
For the cheesecake filling
  • 4 packages cream cheese, softened (8 oz each) Make sure at room temperature
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup heavy cream
  • 1 cup pastry cream For filling
For the topping
  • 1 cup chocolate ganache For topping

Method
 

Preparation
  1. Preheat the oven to 325°F (163°C) and grease a 9-inch springform pan.
  2. In a bowl, combine graham cracker crumbs, melted butter, and 1/4 cup granulated sugar. Press this mixture into the bottom of the springform pan.
Making the Cheesecake
  1. In a large mixing bowl, beat together cream cheese, 1 cup granulated sugar, and vanilla extract until smooth.
  2. Add eggs one at a time, mixing well after each addition.
  3. Pour the cream cheese mixture over the crust and bake for 50-60 minutes or until set.
  4. Let the cheesecake cool, then chill in the refrigerator for at least 4 hours.
Finishing Touches
  1. Once set, spread pastry cream on top of the cheesecake, then drizzle with chocolate ganache.
  2. Slice and serve.

Notes

Make sure all ingredients, especially cream cheese, are at room temperature for a smooth batter. Don’t rush the chilling process; letting it set enhances the flavors. If you want a firmer cheesecake, bake it a bit longer but be careful not to overbake.
