Preparation
- Preheat the oven to 325°F (163°C) and grease a 9-inch springform pan.
- In a bowl, combine graham cracker crumbs, melted butter, and 1/4 cup granulated sugar. Press this mixture into the bottom of the springform pan.
Making the Cheesecake
- In a large mixing bowl, beat together cream cheese, 1 cup granulated sugar, and vanilla extract until smooth.
- Add eggs one at a time, mixing well after each addition.
- Pour the cream cheese mixture over the crust and bake for 50-60 minutes or until set.
- Let the cheesecake cool, then chill in the refrigerator for at least 4 hours.
Finishing Touches
- Once set, spread pastry cream on top of the cheesecake, then drizzle with chocolate ganache.
- Slice and serve.
Notes
Make sure all ingredients, especially cream cheese, are at room temperature for a smooth batter. Don’t rush the chilling process; letting it set enhances the flavors. If you want a firmer cheesecake, bake it a bit longer but be careful not to overbake.
