Bomboloni

Bomboloni are fluffy Italian doughnuts filled with cream, perfect for any occasion and best enjoyed fresh.

Ingredients
  

For the dough
  • 500 g bread flour
  • 250 ml whole milk (lukewarm) Make sure it’s not hot, as hot milk can kill the yeast.
  • 70 g sugar
  • 7 g active dry yeast Ensure yeast is fresh for best results.
  • 2 large eggs (room temperature)
  • 75 g unsalted butter (softened)
  • 1 tsp vanilla extract
  • 1 pinch salt
  • to taste Oil for frying Heat oil to 170°C.
For the filling
  • 500 ml whole milk For the cream filling.
  • 4 large egg yolks
  • 120 g sugar For the filling.
  • 40 g cornstarch
  • 1 tsp vanilla extract For the filling.
  • 25 g butter For the filling.

Method
 

Preparation
  1. Mix lukewarm milk, sugar, and yeast. Let it sit for 5–10 minutes until foamy.
  2. Add flour, eggs, vanilla, and salt. Knead for about 5 minutes.
  3. Add softened butter gradually and knead until the dough is smooth and elastic.
  4. Cover and let it rise for 1.5–2 hours until doubled in size.
  5. Roll the dough to about 1.5 cm thickness and cut into round shapes. Let them rise again for 45 minutes.
Cooking
  1. Heat oil to 170°C and fry until deep golden brown on both sides. Remove and drain.
  2. Heat milk for the cream. In a bowl, whisk egg yolks, sugar, and cornstarch.
  3. Slowly pour hot milk into the mixture while whisking, then cook until thick.
  4. Add butter, mix well, and let it cool completely.
Assembly
  1. Make a hole in each donut, fill with cream, and dust with powdered sugar.

Notes

Serve Bomboloni warm, paired with coffee or hot chocolate, and dusted with powdered sugar just before serving. Store leftovers in an airtight container at room temperature for up to two days, or freeze for longer storage. For variations, consider using different fillings such as chocolate or fruit jams.
