  • 8 oz cream cheese, softened Ensure cream cheese is softened for easier mixing.
  • 1/2 cup sugar Can add more for a sweeter loaf.
  • 1/2 cup butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Grease a loaf pan.
  2. In a mixing bowl, beat the cream cheese, sugar, and butter until smooth.
  3. Add eggs one at a time, mixing well after each addition. Stir in vanilla.
  4. In another bowl, combine flour, baking powder, and salt. Gradually add to the cream cheese mixture, alternating with milk.
  5. Fold in blueberries gently.
Baking
  1. Pour batter into the prepared loaf pan and bake for 60-70 minutes or until a toothpick inserted comes out clean.
  2. Let cool before slicing.

Notes

Can add lemon zest for a refreshing flavor. Mix in chopped nuts for added texture. Store wrapped in plastic in the refrigerator; best within a week, can last up to 10 days. Freeze slices for longer storage.
