Preparation
- Preheat the oven to 350°F (175°C). Grease a loaf pan.
- In a mixing bowl, beat the cream cheese, sugar, and butter until smooth.
- Add eggs one at a time, mixing well after each addition. Stir in vanilla.
- In another bowl, combine flour, baking powder, and salt. Gradually add to the cream cheese mixture, alternating with milk.
- Fold in blueberries gently.
Baking
- Pour batter into the prepared loaf pan and bake for 60-70 minutes or until a toothpick inserted comes out clean.
- Let cool before slicing.
Notes
Can add lemon zest for a refreshing flavor. Mix in chopped nuts for added texture. Store wrapped in plastic in the refrigerator; best within a week, can last up to 10 days. Freeze slices for longer storage.
