Ingredients
  

Cheesecake Filling
  • 4 oz cream cheese, softened Make sure the cream cheese is softened for easy mixing.
  • 2 tablespoons powdered sugar
  • 1/2 teaspoon vanilla extract
Main Ingredients
  • 4 slices bread Use thick slices for better texture.
  • 1 cup fresh blueberries Feel free to substitute with other fruits if desired.
Egg Mixture
  • 2 large eggs
  • 1/4 cup milk
  • 1 teaspoon cinnamon
For Cooking
  • Butter for cooking Melt in skillet before cooking sandwiches.

Preparation
  1. In a bowl, mix the softened cream cheese, powdered sugar, and vanilla extract until smooth.
  2. Spread the cream cheese mixture on two slices of bread and top with fresh blueberries. Place the other slices of bread on top to form a sandwich.
Cooking
  1. In another bowl, whisk together eggs, milk, and cinnamon.
  2. Dip each sandwich into the egg mixture until well coated.
  3. Heat a skillet over medium heat and melt butter.
  4. Cook the sandwiches for 3-4 minutes per side until golden brown.
Serving
  1. Serve warm with additional blueberries and syrup if desired.

Notes

Make sure to let the cooked French toast sit on a wire rack instead of a plate to prevent sogginess. You can prepare the filling ahead of time and refrigerate.
