Ingredients
  

For the crust
  • 150 g biscuit crumbs
  • Butter (for crust) Amount as needed to combine with biscuit crumbs
For the cream layer
  • 200 g cream cheese At room temperature for easier mixing
  • 100 g sugar Adjust to taste for sweetness
  • 200 g crushed pineapple Can substitute fresh pineapple, finely chopped
  • 5 g gelatin Dissolved in warm water
  • 300 ml heavy cream Whipped until soft peaks form
  • Blue food coloring Add gradually to achieve desired color
  • 200 g coconut cream Layered on top after chilling
For decoration
  • Pineapple slices For decorating the top before serving

Method
 

Preparation
  1. Prepare the crust by combining crushed biscuits and melted butter, then press into the bottom of a cake pan.
  2. In a bowl, mix cream cheese, sugar, and crushed pineapple until smooth.
  3. Dissolve gelatin in a little warm water and add it to the cream cheese mixture.
  4. Whip the heavy cream and fold it into the cream cheese mixture.
  5. Add blue food coloring to achieve the desired blue color and pour the mixture over the crust.
  6. Chill in the fridge until set, about 4 hours.
  7. Once set, add the coconut cream on top as the final layer.
  8. Decorate with pineapple slices and serve.

Notes

Serve chilled, optionally garnished with mint or additional pineapple slices. Best enjoyed with iced tea or lemonade. Store in refrigerator, covered, and consume within a week for best taste.
