Ingredients
  

For the Sweet & Spicy Dressing
  • 0.25 cup fresh lime juice Freshly squeezed for best flavor
  • 0.25 cup extra virgin olive oil
  • 0.5 teaspoon cumin
  • 0.5 teaspoon smoked paprika
  • 0.5 teaspoon oregano
  • 2 teaspoons honey
  • 0.75 teaspoon sea salt
  • 0.5 teaspoon black pepper
For the Salad
  • 1 can black beans, rinsed and drained (15 oz) Can also use cooked black beans
  • 1 can chickpeas, rinsed and drained (15 oz)
  • 1 medium red bell pepper, finely chopped
  • 1 bag frozen corn, cooked and cooled Fresh corn can also be used
  • 1 jalapeño seeded and diced Adjust for spice level
  • 0.5 cup diced red onion
  • 1 medium avocado, diced Add just before serving to keep it fresh
  • 0.33 cup crumbled feta cheese Can replace with vegan cheese if needed
  • 0.5 cup fresh cilantro, chopped

Method
 

Preparation
  1. In a large bowl, whisk together lime juice, olive oil, cumin, smoked paprika, oregano, honey, salt, and pepper.
  2. To the bowl with the dressing, add the black beans, chickpeas, bell pepper, corn, red onion, jalapeño, avocado, and cilantro. Toss gently to coat.
  3. Add the crumbled feta and fold it into the mixture softly.
  4. Taste the salad and adjust with more lime, salt, or cilantro if needed. Serve immediately for maximum freshness.

Notes

For a spicier kick, use a serrano pepper or cayenne. This salad is great for meal prep and can last in the fridge well. Add the avocado just before serving to maintain color.
