Preparation
- In a large pot, toast the dried guajillo and ancho peppers over medium heat until fragrant, about 2 minutes. Remove, stem, and seed the peppers.
- Blend the toasted peppers with a bit of beef broth to form a paste.
- In the same pot, sauté the onion and garlic until soft.
- Add the meat and sear on all sides.
- Stir in the pepper paste, cumin, oregano, and remaining beef broth. Season with salt and pepper.
Cooking
- Bring to a simmer, cover, and cook for 2-3 hours or until the meat is tender.
Serving
- Serve with lime wedges and chopped cilantro.
Notes
To store leftover birria, let it cool completely before placing it in an airtight container. Refrigerate it for up to 3 days. For longer storage, you can freeze birria in a freezer-safe container for up to 3 months. When ready to enjoy again, thaw it in the refrigerator overnight and reheat on the stove until warmed through.
