Ingredients
  

For the Crostini
  • 1 baguette 1 baguette, thinly sliced
  • 2 tablespoons 2 tablespoons olive oil Use extra virgin for best flavor.
For the Beef and Sauce
  • 1 pound 1 pound beef tenderloin, trimmed Sear to medium-rare.
  • 1 cup 1 cup heavy cream Heavy cream is essential for a rich sauce.
  • 1/2 cup 1/2 cup grated Parmesan cheese Freshly grated preferred.
  • to taste Salt and pepper to taste
  • optional Fresh herbs for garnish Such as parsley or chives.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Brush the baguette slices with olive oil and place them on a baking sheet.
  3. Toast the baguette slices in the oven for about 5-7 minutes or until golden brown.
  4. Season the beef tenderloin with salt and pepper, then sear in a hot skillet for about 4-5 minutes on each side for medium-rare.
  5. Remove the beef from the skillet and let it rest before slicing it thinly.
  6. In the same skillet, add the heavy cream and bring it to a simmer. Stir in the Parmesan cheese until melted and smooth.
Assembly
  1. Place slices of beef on each crostini, drizzle with Parmesan cream sauce, and garnish with fresh herbs if desired.
Serving
  1. Arrange the Beef Tenderloin Crostini on a platter. Best enjoyed fresh out of the oven.

Notes

Use fresh herbs to garnish for added flavor. For a more robust taste, try marinating the beef for a few hours before cooking. Slice the beef thinly against the grain for a tender bite.
