  • 1 large bag Fritos Scoops
  • 3-4 cups cooked pulled pork Use leftover pulled pork for a quicker meal.
  • 1 can (28 oz) Bush’s Original Baked Beans
  • 1 cup Sweet Baby Ray’s BBQ Sauce Plus extra for drizzling.
  • 2 cups shredded Monterey Jack cheese Can substitute with cheddar or cheese of your choice.
  • 2 cups prepared coleslaw
  • 1 container French’s Crispy Fried Onions
  • to taste Chopped green onions (optional) Add for extra flavor.

Method
 

Preparation
  1. Warm the pulled pork in a saucepan or microwave until heated through.
  2. In a separate saucepan, heat the baked beans. Stir in about 1⁄2 cup of BBQ sauce and simmer for 3-5 minutes.
Assembly
  1. Divide Fritos Scoops among serving bowls.
  2. Spoon the BBQ baked beans over the Fritos.
  3. Add a generous scoop of warm pulled pork on top.
  4. Drizzle additional BBQ sauce over the pulled pork.
  5. Sprinkle with shredded Monterey Jack cheese while everything is still hot so that the cheese begins to melt.
  6. Top with a scoop of creamy coleslaw.
  7. Finish with crispy fried onions and, if desired, chopped green onions.
  8. Serve immediately while the Fritos are still crunchy.

Notes

If you have leftovers, store each component separately in airtight containers. Reassemble fresh when you're ready to eat again. You can prepare the pulled pork and baked beans ahead of time.
