  • 1 lb ground beef
  • 6 slices bacon, cooked and crumbled
  • 1 cup barbecue sauce (your favorite brand or homemade)
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced onions (yellow or white)
  • 1 cup frozen tater tots
  • Salt and pepper to taste

Method
 

Preparation
  1. Heat a skillet over medium heat. Add the ground beef and cook until it’s completely browned, breaking it up with a spoon as it cooks. Once cooked, drain off any excess grease. Season lightly with salt and pepper. Stir in the barbecue sauce until everything is well coated.
  2. Spread the beef mixture evenly across the bottom of a medium-sized baking dish. Sprinkle the diced onions over the top, followed by the crumbled bacon. Then scatter a layer of cheddar cheese on top.
  3. Place the frozen tater tots in a single layer over the cheese.
Baking
  1. Preheat your oven to 375°F (190°C). Bake for 25–30 minutes, or until the tater tots turn golden and the cheese is melted and bubbly.
Serving
  1. Let the casserole cool slightly before serving. Serve warm, optionally with a side salad.

Notes

For extra smoky flavor, use smoked cheddar or add liquid smoke. Add chili flakes or pickled jalapeños for heat. Stir 1/2 cup sour cream into the beef mixture for a creamier dish.
