Preparation
- Heat a skillet over medium heat. Add the ground beef and cook until it’s completely browned, breaking it up with a spoon as it cooks. Once cooked, drain off any excess grease. Season lightly with salt and pepper. Stir in the barbecue sauce until everything is well coated.
- Spread the beef mixture evenly across the bottom of a medium-sized baking dish. Sprinkle the diced onions over the top, followed by the crumbled bacon. Then scatter a layer of cheddar cheese on top.
- Place the frozen tater tots in a single layer over the cheese.
Baking
- Preheat your oven to 375°F (190°C). Bake for 25–30 minutes, or until the tater tots turn golden and the cheese is melted and bubbly.
Serving
- Let the casserole cool slightly before serving. Serve warm, optionally with a side salad.
Notes
For extra smoky flavor, use smoked cheddar or add liquid smoke. Add chili flakes or pickled jalapeños for heat. Stir 1/2 cup sour cream into the beef mixture for a creamier dish.
