Main Ingredients
  • 1 lb ground pork Fresh ground pork for best flavor.
  • 1 lb ground veal Fresh ground veal for best flavor.
  • 1 cup crushed ice Keeps the mixture moist.
  • 1 tsp salt
  • 1/2 tsp white pepper
  • 1/4 tsp ground coriander
  • 1/4 tsp mace
  • 1 small onion, finely grated
  • Butter, for greasing the loaf pan Use as needed to grease the pan.

Method
 

Preparation
  1. Preheat the oven to 325°F (160°C).
  2. Mix ground pork and veal in a food processor until smooth.
  3. Gradually add crushed ice while mixing until well combined.
  4. Add salt, white pepper, coriander, mace, and grated onion; blend thoroughly.
Baking
  1. Grease a loaf pan and fill it with the meat mixture, smoothing the top.
  2. Score a cross pattern on top of the meatloaf.
  3. Bake for 60–70 minutes, until browned and fully cooked.
  4. Let it rest for 10 minutes before slicing.
Serving
  1. Serve warm, sliced, paired with a dollop of mustard.

Notes

Store leftovers wrapped tightly or in an airtight container. Can be kept in the fridge for up to 3 days or frozen for up to 3 months. Customize with herbs or vegetables for additional flavor.
