  • 1 package Instant banana pudding Prepare according to package directions.
  • 2 cups Milk For preparing the banana pudding.
  • 2 cups Cool Whip For folding into the pudding mixture.
  • 2 medium Bananas Ripe, finely chopped.
  • 1 box Graham crackers For making the sandwiches.
Optional Garnish
  • 1 cup Crushed vanilla wafers For rolling the sandwiches.

Method
 

Preparation
  1. Prepare the banana pudding with milk according to the package directions, then let it thicken.
  2. Fold in the Cool Whip and finely chopped banana pieces until creamy.
  3. Spread the banana pudding mixture onto graham crackers, then top with another graham cracker to make sandwiches.
  4. Freeze until firm.
Serving
  1. Roll the sides in crushed vanilla wafers if desired.
  2. To serve, take the sandwiches out of the freezer and let them sit for a couple of minutes to soften slightly. Then, cut them in halves or quarters as preferred.
Storage
  1. Store the sandwiches in an airtight container in the freezer for 2-3 weeks, separating layers with parchment paper to prevent sticking.

Notes

For best flavor, use ripe bananas. You can substitute graham crackers with chocolate wafers or other mild-flavored cookies. Consider adding chopped nuts or mini chocolate chips for additional texture.
