Preparation
- Prepare the banana pudding with milk according to the package directions, then let it thicken.
- Fold in the Cool Whip and finely chopped banana pieces until creamy.
- Spread the banana pudding mixture onto graham crackers, then top with another graham cracker to make sandwiches.
- Freeze until firm.
Serving
- Roll the sides in crushed vanilla wafers if desired.
- To serve, take the sandwiches out of the freezer and let them sit for a couple of minutes to soften slightly. Then, cut them in halves or quarters as preferred.
Storage
- Store the sandwiches in an airtight container in the freezer for 2-3 weeks, separating layers with parchment paper to prevent sticking.
