Preparation
- Preheat your oven to 325°F (160°C).
- In a bowl, combine crushed vanilla wafers and melted butter. Press this mixture into the bottom of a 9-inch springform pan to form a crust.
- In another bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition.
- Stir in heavy cream, vanilla extract, and mashed bananas until well combined.
- Pour the cheesecake mixture over the prepared crust and smooth the top.
Baking
- Bake in the preheated oven for about 50-60 minutes, or until the center is set.
Cooling
- Let the cheesecake cool at room temperature before refrigerating for at least 4 hours.
Serving
- Once chilled, top with whipped cream, sliced bananas, and crushed vanilla wafers.
- Optionally, layer with prepared banana pudding mix before serving.
Notes
Make sure the cream cheese is softened before mixing for a smooth texture. For a crispy crust, bake the crust before adding the filling for about 10 minutes. You can also incorporate chocolate chips or coconut flakes for variations.
