Preparation
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Peel the bananas and mash them thoroughly in a mixing bowl.
- Add peanut butter, rolled oats, vanilla extract, cinnamon, and salt to the mashed bananas and mix until combined.
- Fold in the chocolate chips.
- Drop small mounds of dough onto the prepared baking sheet and flatten slightly.
- Bake in the oven until edges are set and lightly golden, about 10-12 minutes.
- Remove from the oven and let cool on the baking sheet for several minutes before transferring to a rack.
Notes
For best results, use very ripe bananas. Adjust the texture by adding more oats if preferred. Allow cooling helps cookies firm up while maintaining a chewy center.
