  • 2 over-ripe bananas The riper, the better for sweetness
  • 0.5 cup chocolate chips Dark chocolate chips can be used for richer flavor
  • 1 teaspoon vanilla extract
  • 0.25 teaspoon cinnamon
  • 0.25 teaspoon salt

Preparation
  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Peel the bananas and mash them thoroughly in a mixing bowl.
  3. Add peanut butter, rolled oats, vanilla extract, cinnamon, and salt to the mashed bananas and mix until combined.
  4. Fold in the chocolate chips.
  5. Drop small mounds of dough onto the prepared baking sheet and flatten slightly.
  6. Bake in the oven until edges are set and lightly golden, about 10-12 minutes.
  7. Remove from the oven and let cool on the baking sheet for several minutes before transferring to a rack.

Notes

For best results, use very ripe bananas. Adjust the texture by adding more oats if preferred. Allow cooling helps cookies firm up while maintaining a chewy center.
