  • 1 cup cottage cheese
  • 1 large ripe banana
  • 2 large eggs
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 1 cup all-purpose flour
  • 1/2 cup chocolate chips
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a donut pan.
  2. In a mixing bowl, mash the ripe banana until smooth.
  3. Add the cottage cheese, eggs, honey (or maple syrup), and vanilla extract to the banana and mix well until combined.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture and stir until just combined.
  6. Fold in the chocolate chips.
Baking
  1. Spoon the batter into the prepared donut pan, filling each mold about 2/3 full.
  2. Bake for 12-15 minutes or until a toothpick inserted into the center comes out clean.
  3. Let the donuts cool for a few minutes in the pan before transferring them to a wire rack to cool completely.

Notes

Serve these delicious donuts warm, dusted with powdered sugar or drizzled with extra honey or maple syrup. They are also great with a side of fresh fruit or yogurt for a complete breakfast. Store any leftover donuts in an airtight container at room temperature for up to three days, or freeze them wrapped tightly in plastic wrap for up to three months.
