Preparation
- Preheat the oven to 350°F (175°C) and grease a baking dish.
- In a large bowl, mash the ripe bananas and mix in the cottage cheese, eggs, and vanilla extract until well combined.
- In another bowl, whisk together the flour, sugars, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Fold in the chocolate chips.
- Pour the batter into the prepared baking dish and spread evenly.
Baking
- Bake for about 25-30 minutes or until a toothpick inserted in the center comes out clean.
Serving
- Allow to cool before slicing into squares and serve.
Notes
Store any leftover squares in an airtight container at room temperature for up to 3 days. For longer storage, refrigerate for up to a week or freeze for up to 3 months.
