  • 1 cup cottage cheese Use low-fat or regular as desired
  • 2 ripe bananas Must be very ripe for natural sweetness
  • 2 large eggs Can substitute with applesauce for egg-free option
  • 1 cup all-purpose flour Can use whole wheat or gluten-free flour if desired
  • 1/2 cup brown sugar Packed for best results
  • 1/4 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips Add more on top for extra chocolatey goodness
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a baking dish.
  2. In a large bowl, mash the ripe bananas and mix in the cottage cheese, eggs, and vanilla extract until well combined.
  3. In another bowl, whisk together the flour, sugars, baking powder, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  5. Fold in the chocolate chips.
  6. Pour the batter into the prepared baking dish and spread evenly.
Baking
  1. Bake for about 25-30 minutes or until a toothpick inserted in the center comes out clean.
Serving
  1. Allow to cool before slicing into squares and serve.
