Ingredients
  

Dry Ingredients
  • 1.5 cups all-purpose flour
  • 0.5 cups sugar You can reduce for a less sweet version.
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
Wet Ingredients
  • 2 large eggs
  • 0.5 cups melted butter
  • 1 teaspoon vanilla extract
  • 2 ripe bananas Overripe for better sweetness.
Add-ins
  • 1 cup raisins Soak in warm water for 10 minutes for plumper texture.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, mash the bananas.
  3. Add melted butter and mix well.
  4. Stir in sugar, eggs, and vanilla extract until combined.
Combining
  1. In another bowl, whisk together flour, baking powder, baking soda, and salt.
  2. Slowly add the dry ingredients to the banana mixture and fold in the raisins.
Baking
  1. Spoon the batter into the muffin cups, filling them about 2/3 full.
  2. Bake for 18-20 minutes or until a toothpick comes out clean.
  3. Allow to cool before serving.

Notes

Serve warm or at room temperature. You can spread butter or cream cheese on top for extra flavor.
