  • Salt and black pepper, to taste

Preparation
  1. Preheat the oven to 375°F (190°C). Lightly grease a baking dish or oven-safe casserole with olive oil or spray.
  2. In a large bowl, combine zucchini slices with minced garlic, olive oil, salt, and pepper. Toss until all slices are evenly coated and flavorful.
  3. Spread the zucchini slices in an even layer in your baking dish, overlapping slightly if needed.
  4. Sprinkle the zucchini generously with cheddar and Parmesan cheese. Then top with the breadcrumbs, spreading them evenly for a golden, crispy finish.
Baking
  1. Place in the preheated oven and bake for 25–30 minutes, or until the zucchini is soft and the topping is golden brown and bubbly.

  1. Let the dish cool for 5 minutes before serving. Enjoy as a side dish with grilled chicken, fish, or pasta—or serve on its own with a crisp green salad.

Notes

To make this dish into a main, add cooked shredded chicken or turkey before baking. For a gluten-free option, use gluten-free breadcrumbs without sacrificing crunch. You can also add cayenne or red pepper flakes for heat, or experiment with different cheeses like gouda or blue cheese.
