  • 1 lb Ground beef Can substitute with ground turkey or chicken.
  • 1 packet Taco seasoning Or homemade mix of chili powder, cumin, garlic powder, onion powder, and paprika.
  • 12 small flour tortillas Cut into circles to form cups.
  • 2 cups shredded cheddar cheese Can experiment with different cheese types.
  • 1 cup diced tomatoes Fresh or canned, depending on availability.
  • 1 cup sour cream For serving.

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, cook the ground beef over medium heat until browned. Add in taco seasoning and mix well.
  3. Cut small flour tortillas into circles and press them into a muffin tin to form cups.
Assembly and Baking
  1. Fill each tortilla cup with the beef mixture, then top with shredded cheddar cheese and diced tomatoes.
  2. Bake in the preheated oven for about 15-20 minutes or until the tortillas are crispy and the cheese is melted.
Serving
  1. Serve warm with a dollop of sour cream on top.

Notes

For a vegetarian option, replace ground beef with sautéed mushrooms, lentils, or black beans. You can also store leftovers in an airtight container in the fridge for up to 3 days.
