Preparation
- Preheat the oven to 375°F (190°C).
- In a skillet, cook the ground beef over medium heat until browned. Add in taco seasoning and mix well.
- Cut small flour tortillas into circles and press them into a muffin tin to form cups.
Assembly and Baking
- Fill each tortilla cup with the beef mixture, then top with shredded cheddar cheese and diced tomatoes.
- Bake in the preheated oven for about 15-20 minutes or until the tortillas are crispy and the cheese is melted.
Serving
- Serve warm with a dollop of sour cream on top.
Notes
For a vegetarian option, replace ground beef with sautéed mushrooms, lentils, or black beans. You can also store leftovers in an airtight container in the fridge for up to 3 days.
