Preparation
- Preheat the oven to 375°F (190°C).
- In a bowl, whisk together pineapple juice, soy sauce, brown sugar, ketchup, garlic, and ginger.
- Place chicken in a baking dish and pour the sauce over it.
Cooking
- Bake for about 25-30 minutes until the chicken is cooked through.
- In a small saucepan, combine cornstarch and water. Cook over medium heat until the sauce thickens.
- Pour the thickened sauce over the chicken.
- Garnish with chopped green onions before serving.
Notes
To store, let it cool completely, then place in an airtight container. Refrigerate for up to 3 days, or freeze for up to 2 months. Thaw in the fridge before reheating. Marinate the chicken for added flavor.
