  • 1 pound chicken thighs or breasts Thighs are recommended for juiciness.
  • 1 cup pineapple juice Fresh pineapple can be used as a substitute.
  • 1/2 cup soy sauce Use gluten-free version for gluten-free diets.
  • 1/2 cup brown sugar Adjust the amount for sweetness preference.
  • 1/4 cup ketchup
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 tablespoons cornstarch Used to thicken the sauce.
  • 1/4 cup water
  • Chopped green onions for garnish Add just before serving.

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, whisk together pineapple juice, soy sauce, brown sugar, ketchup, garlic, and ginger.
  3. Place chicken in a baking dish and pour the sauce over it.
Cooking
  1. Bake for about 25-30 minutes until the chicken is cooked through.
  2. In a small saucepan, combine cornstarch and water. Cook over medium heat until the sauce thickens.
  3. Pour the thickened sauce over the chicken.
  4. Garnish with chopped green onions before serving.

Notes

To store, let it cool completely, then place in an airtight container. Refrigerate for up to 3 days, or freeze for up to 2 months. Thaw in the fridge before reheating. Marinate the chicken for added flavor.
