Preparation
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine the diced potatoes, chicken, broccoli, garlic powder, onion powder, salt, and pepper.
- Drizzle with olive oil or melt butter, and mix well.
Cooking
- Transfer the mixture to a greased baking dish. Pour the milk over the top.
- Sprinkle cheddar cheese on top of the mixture.
- Cover with foil and bake for 30 minutes, then remove the foil and bake for an additional 15-20 minutes, or until the potatoes are tender and cheese is bubbly.
- Let it cool for a few minutes before serving.
Notes
Serve warm with a simple green salad or crusty bread. You can also add extra cheese on the side for those who want more gooey goodness. Store leftovers in an airtight container in the refrigerator for 3-4 days or freeze for longer storage.
