  • 4 cups diced russet potatoes Cooked until just fork-tender.
  • 2 cups cooked chicken breast, chopped Use rotisserie or leftovers for convenience.
  • 2 cups broccoli florets Blanched briefly for color and crispness.
  • 2 tbsp butter For making the sauce.
  • 2 cloves garlic, minced Adds flavor to the sauce.
  • 2 tbsp all-purpose flour Used to thicken the sauce.
  • 2 cups milk Add gradually for smooth sauce.
  • 1/2 cup sour cream Gives a tangy flavor.
  • 1 1/2 cups shredded cheddar cheese For creamy cheesiness.
  • 1/2 cup grated Parmesan cheese Adds depth of flavor.
  • 1/2 tsp paprika For a hint of color and flavor.
  • 1/2 tsp thyme For added herb flavor.
  • Salt and black pepper to taste Season to your preference.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
  2. Bring a large pot of salted water to a boil and cook the diced potatoes until they are just tender. Drain and set aside.
  3. Blanch the broccoli in boiling water for about 2 minutes, then drain well to remove excess moisture.
Making the sauce
  1. In a saucepan, melt the butter over medium heat and sauté the garlic until fragrant.
  2. Add the flour and cook briefly, stirring constantly.
  3. Slowly pour in the milk while whisking to create a smooth sauce. Continue cooking until the mixture thickens.
  4. Remove from heat and stir in the sour cream, cheddar cheese, Parmesan, and seasonings. Mix until the cheese is melted and the sauce is creamy.
Combining and baking
  1. In a large bowl, combine the potatoes, chicken, and broccoli. Pour the sauce over the mixture and gently stir until everything is evenly coated.
  2. Transfer the mixture into the prepared baking dish and spread it evenly. Top with extra cheese and optional bacon bits.
  3. Bake for about 40 minutes, or until the casserole is bubbling and the top is lightly golden.
  4. Remove from the oven, let it rest for a few minutes, then garnish with green onions before serving.

Notes

For best results, let the casserole rest before serving. You can also customize it by adding different vegetables or using a different cheese blend.
