Preparation
- Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
- Bring a large pot of salted water to a boil and cook the diced potatoes until they are just tender. Drain and set aside.
- Blanch the broccoli in boiling water for about 2 minutes, then drain well to remove excess moisture.
Making the sauce
- In a saucepan, melt the butter over medium heat and sauté the garlic until fragrant.
- Add the flour and cook briefly, stirring constantly.
- Slowly pour in the milk while whisking to create a smooth sauce. Continue cooking until the mixture thickens.
- Remove from heat and stir in the sour cream, cheddar cheese, Parmesan, and seasonings. Mix until the cheese is melted and the sauce is creamy.
Combining and baking
- In a large bowl, combine the potatoes, chicken, and broccoli. Pour the sauce over the mixture and gently stir until everything is evenly coated.
- Transfer the mixture into the prepared baking dish and spread it evenly. Top with extra cheese and optional bacon bits.
- Bake for about 40 minutes, or until the casserole is bubbling and the top is lightly golden.
- Remove from the oven, let it rest for a few minutes, then garnish with green onions before serving.
