  • 4 pieces Breaded frozen chicken patties
  • 2 cups Raw dry penne pasta
  • 24 ounces Marinara sauce
  • 2 cups Shredded cheese Use mozzarella, cheddar, or pepper jack.
  • 2 cups Chopped vegetables (like bell peppers, zucchini, or spinach) Use any vegetables you have on hand.

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a rectangular baking pan, place the raw penne pasta at the bottom.
  3. Layer the frozen breaded chicken patties on top of the penne.
  4. Add the marinara sauce, shredded cheese, and chopped vegetables over the patties.
  5. Add enough water or broth to cover the pasta.
  6. Cover the pan with aluminum foil.
Baking
  1. Bake for about 30-35 minutes or until the chicken is cooked through and the pasta is tender.
  2. Remove foil, and bake for an additional 10 minutes to brown the top if desired.
  3. Let it cool slightly before serving.

Notes

To serve, sprinkle some extra cheese or fresh herbs on top for added flavor. This meal pairs well with a simple green salad or garlic bread for an extra crunch. Store leftovers in an airtight container in the refrigerator for about 3-4 days, or freeze for up to 2-3 months.
