Baked Blueberry Fritter Bites

Ingredients
  

Dry Ingredients
  • 1.5 cups all-purpose flour
  • 2 teaspoons baking powder
  • 0.25 teaspoons baking soda
  • 0.25 teaspoons salt
Wet Ingredients
  • 0.5 cups granulated sugar
  • 1 large egg
  • 0.5 cups milk
  • 1 teaspoon vanilla extract
Fruit
  • 1 cup fresh blueberries Gently fold in to avoid smashing.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and grease a muffin tin.
  2. In a large bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a separate bowl, mix together sugar, egg, milk, and vanilla extract until combined.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
  5. Gently fold in the blueberries.
  6. Using a spoon, fill each muffin cup with the batter.
Baking
  1. Bake for 15-18 minutes, or until a toothpick inserted into the center comes out clean.
  2. Allow to cool slightly before serving.

Notes

These bites can be served warm, plain, or dusted with powdered sugar. Store in an airtight container for 2-3 days at room temperature or up to a week in the refrigerator. Reheat before serving if desired.
