  • 1/2 cup chopped red onion Consider using green onions or sweet onions for a milder flavor.
  • 2 hard boiled eggs, chopped
  • 1/2 cup shredded cheddar cheese Optional.
Dressing Ingredients
  • 1/2 cup mayonnaise For a lighter version, substitute with Greek yogurt.
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon sugar
  • Salt and pepper to taste

Method
 

Preparation
  1. In a large bowl, combine the peas, crumbled bacon, and chopped red onion.
  2. In a separate bowl, mix together mayonnaise, apple cider vinegar, sugar, salt, and pepper until smooth.
  3. Pour the dressing over the pea mixture and stir until well combined.
  4. Gently fold in the chopped hard boiled eggs and cheese, if using.
  5. Chill the salad in the refrigerator for at least 30 minutes before serving.

Notes

Bacon Pea Salad is best served chilled on a platter or in individual bowls and goes well with grilled meats or buffet spreads. Garnish with extra crumbled bacon or a sprinkle of fresh herbs, if desired. Store leftovers in an airtight container; the salad remains good for 2 to 3 days.
