Ingredients
  

For the Cake
  • 2 cups all-purpose flour
  • 1.5 teaspoons baking powder
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • 0.5 cup unsalted butter, softened Make sure the butter is at room temperature.
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 0.5 cup milk
  • 2 cups apples, peeled and diced Use firm apples like Granny Smith or Honeycrisp.
For the Topping
  • 1 cup mascarpone cheese
  • 0.5 cup powdered sugar

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a cake pan.
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In another bowl, cream the butter and sugar until light and fluffy, then mix in the eggs and vanilla.
  4. Gradually add the dry ingredients and milk, mixing until just combined.
  5. Fold in the diced apples.
Baking
  1. Pour the batter into the prepared cake pan and bake for 30-35 minutes or until a toothpick comes out clean.
  2. Let the cake cool.
Topping
  1. For the topping, mix mascarpone cheese and powdered sugar together until smooth. Spread over the cooled cake.
  2. Serve and enjoy!

Notes

This cake is best served at room temperature. Drizzle with caramel sauce or top with additional apple slices for an extra touch. Can store in refrigerator for 3-4 days.
