Ingredients
  

For the filling
  • 1 can apple fruit filling and topping (or other fruit filling) 21 ounce can
  • 6 pieces flour tortillas 8 inch
  • 1 teaspoon cinnamon
For the sauce
  • 1/3 cup butter or margarine
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup water

Method
 

Preparation
  1. Spoon the apple fruit filling evenly down the centers of the tortillas.
  2. Sprinkle the cinnamon over the filling.
  3. Roll up the tortillas and place them seam side down in a lightly greased baking dish.
Sauce Preparation
  1. In a saucepan, bring the butter, sugar, brown sugar, and water to a boil.
  2. Reduce the heat and simmer the mixture, stirring constantly, for about 3 minutes.
Baking
  1. Pour the sauce over the enchiladas and let them sit for 30 minutes.
  2. Preheat your oven to 350°F.
  3. Bake the enchiladas for 20 minutes.

Notes

Serve warm with a drizzle of sauce and optional toppings such as vanilla ice cream or whipped cream. Store leftovers in an airtight container in the refrigerator for up to 3 days.
