  • 1.5 cups rolled oats
  • 0.5 cup oat flour
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1 pinch salt
Wet Ingredients
  • 1 egg
  • 0.5 cup cottage cheese, blended
  • 2 tablespoons maple syrup Feel free to increase for added sweetness.
  • 2 tablespoons oil
  • 1 teaspoon vanilla
Fruits
  • 1 apple, finely diced Make sure to finely dice for even mixing.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the rolled oats, oat flour, baking powder, cinnamon, and salt.
  3. In another bowl, mix the egg, blended cottage cheese, maple syrup, oil, and vanilla until well combined.
  4. Add the wet ingredients to the dry ingredients and mix until just combined.
  5. Fold in the finely diced apple.
  6. Drop spoonfuls of the dough onto a baking sheet lined with parchment paper.
Baking
  1. Bake for 12-15 minutes or until golden brown.
  2. Let cool slightly before serving.
