- In another bowl, mix the egg, blended cottage cheese, maple syrup, oil, and vanilla until well combined.
- Add the wet ingredients to the dry ingredients and mix until just combined.
- Fold in the finely diced apple.
- Drop spoonfuls of the dough onto a baking sheet lined with parchment paper.
Baking
- Bake for 12-15 minutes or until golden brown.
- Let cool slightly before serving.
