Ingredients
  

For the chicken mixture
  • 1 lb chicken thighs
  • 1 cup pineapple chunks Fresh or canned
  • 1 tablespoon soy sauce Can adjust to taste
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder Can adjust to taste
  • Salt and pepper to taste
  • Green onions for garnish
For serving
  • 2 cups cooked rice White or brown rice

Method
 

Preparation
  1. Preheat the air fryer to 375°F (190°C).
  2. In a bowl, combine the chicken thighs, pineapple chunks, soy sauce, olive oil, garlic powder, salt, and pepper.
  3. Mix well until the chicken is coated.
Cooking
  1. Place the chicken and pineapple mixture in the air fryer basket.
  2. Air fry for 20-25 minutes, turning halfway through, until the chicken is cooked through.
Serving
  1. Serve the chicken and pineapple over a bed of cooked rice and garnish with green onions.

Notes

Make sure to cut the chicken into even pieces for even cooking. You can adjust the amount of soy sauce and garlic powder to suit your taste. If you like extra sweetness, add more pineapple chunks or a drizzle of honey. Serve with lime wedges for a zesty kick! Leftovers can be stored in an airtight container in the refrigerator for up to three days or frozen for up to three months.
