Ingredients
  

Vegetables
  • 2 cups Brussels sprouts Halved
  • 1 red bell pepper Chopped into 1-inch pieces
  • 1 green bell pepper Chopped into 1-inch pieces
  • 1 yellow squash Chopped into chunks
  • 1 zucchini Chopped into chunks
  • 1 yellow onion Chopped
Seasonings and Oils
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt

Method
 

Preparation
  1. Halve the Brussels sprouts and chop the peppers into 1-inch pieces.
  2. Chop the yellow squash and zucchini into chunks, and chop the onion.
  3. Add all the vegetables to a large mixing bowl.
  4. Drizzle the vegetables with olive oil and sprinkle on the garlic powder, Italian seasoning, and salt.
  5. Stir to coat the vegetables evenly.
Cooking
  1. Pour the vegetable mixture into an air fryer basket.
  2. Cook at 375 degrees Fahrenheit for 10-15 minutes, or until the vegetables are as tender as you would like.
  3. Shake the basket every 5 minutes during cooking.
  4. Serve hot.

Notes

Store any leftovers in an airtight container in the refrigerator for about 3-4 days. Reheat in the air fryer to regain crispiness. Don't overcrowd the basket, and try adding different seasonings to suit your taste. Various vegetables like carrots or sweet potatoes can also be used, adjusting cooking times as needed.
