  • 1 burrito-size tortilla 1 burrito-size tortilla For best fit in air fryer.
  • 3 pieces 3 eggs
  • 1/4–1/3 cup cottage cheese Use to taste.
  • to taste Salt & pepper (or your favorite seasoning) Adjust according to preference.
  • 1/2 piece red bell pepper, chopped Or to taste.
  • as needed handful Favorite toppings (like spinach) Use any toppings you like.
  • as needed cup Shredded cheese Any cheese of choice.

Method
 

Preparation
  1. Line your air fryer with an air fryer liner.
  2. Place the tortilla into the air fryer, ensuring the sides are covered.
  3. In a bowl, whisk together the eggs and cottage cheese. Pour this mixture into the tortilla in the air fryer.
  4. Season with salt and pepper.
  5. Sprinkle the chopped bell pepper and spinach on top. Add shredded cheese to finish it off.
Cooking
  1. Air fry at 350 degrees F (180 degrees C) until the eggs are set, about 20 minutes.
  2. Remove the quiche, let it cool for a few minutes, then quarter and serve.

Notes

Serve warm or at room temperature; great with fresh fruit, a side salad, or salsa. Leftovers can be stored in an airtight container in the fridge for up to 3 days.
