Preparation
- Line your air fryer with an air fryer liner.
- Place the tortilla into the air fryer, ensuring the sides are covered.
- In a bowl, whisk together the eggs and cottage cheese. Pour this mixture into the tortilla in the air fryer.
- Season with salt and pepper.
- Sprinkle the chopped bell pepper and spinach on top. Add shredded cheese to finish it off.
Cooking
- Air fry at 350 degrees F (180 degrees C) until the eggs are set, about 20 minutes.
- Remove the quiche, let it cool for a few minutes, then quarter and serve.
Notes
Serve warm or at room temperature; great with fresh fruit, a side salad, or salsa. Leftovers can be stored in an airtight container in the fridge for up to 3 days.
