Preparation
- Preheat the air fryer to 360°F (180°C) and lightly spray the basket.
- In a skillet, sauté the diced onion for a few minutes until softened.
- Add ground beef to the skillet and cook, stirring occasionally, until browned. Drain any excess grease.
- Stir in taco seasoning, followed by the diced tomatoes, cauliflower rice, and kale. Stir fry for about 4-6 minutes until the vegetables are soft. Drain any excess moisture from the mixture.
- Stuff the hollowed bell peppers with the ground beef mixture.
Cooking
- Place the stuffed peppers in the air fryer basket and air fry for 10-12 minutes or until they reach your desired softness.
- Top each pepper with shredded cheese and cook for a couple more minutes until the cheese is melted.
- Serve warm, garnished with parsley or chives.
Notes
For leftovers, allow the stuffed peppers to cool, then store in an airtight container in the refrigerator for up to 3 days. Reheat in the air fryer until warmed through. Feel free to experiment with different veggies or spices for extra flavor.
