Air Fryer Stuffed Peppers

A healthier twist on traditional stuffed peppers, filled with ground beef, cauliflower rice, and fresh vegetables, all cooked in an air fryer for a quick weeknight dinner.

  • 1.5 pounds ground beef can substitute with ground turkey or plant-based alternative
  • 1.5 cups cauliflower rice
  • 0.5 small red onion (finely diced)
  • 1 cup baby tomatoes (halved)
  • 1.5 cups chopped kale
  • to taste Salt and pepper
  • 1 tablespoon taco seasoning
  • 4 pieces bell peppers (deseeded and hollowed out)
  • 0.5 cup shredded cheese
  • to taste Chopped parsley or chives (for garnish)

Method
 

Preparation
  1. Preheat the air fryer to 360°F (180°C) and lightly spray the basket.
  2. In a skillet, sauté the diced onion for a few minutes until softened.
  3. Add ground beef to the skillet and cook, stirring occasionally, until browned. Drain any excess grease.
  4. Stir in taco seasoning, followed by the diced tomatoes, cauliflower rice, and kale. Stir fry for about 4-6 minutes until the vegetables are soft. Drain any excess moisture from the mixture.
  5. Stuff the hollowed bell peppers with the ground beef mixture.
Cooking
  1. Place the stuffed peppers in the air fryer basket and air fry for 10-12 minutes or until they reach your desired softness.
  2. Top each pepper with shredded cheese and cook for a couple more minutes until the cheese is melted.
  3. Serve warm, garnished with parsley or chives.

Notes

For leftovers, allow the stuffed peppers to cool, then store in an airtight container in the refrigerator for up to 3 days. Reheat in the air fryer until warmed through. Feel free to experiment with different veggies or spices for extra flavor.
