Preparation
- Preheat your air fryer to 400 degrees F (200 degrees C).
- In a microwave-safe bowl, cook the baby gold potatoes on high until just tender, which takes about 5 minutes.
- Once tender, transfer the potatoes to a baking sheet and gently smash them down until they are about 3/4 to 1/2-inch thick.
Cooking
- Brush the tops of the smashed potatoes with melted butter. Season them with salt, garlic powder, and black pepper.
- Place the seasoned potatoes in the air fryer in a single layer. Cook them for about 10 minutes, or until they are golden and crispy.
- Garnish with chopped parsley if desired, and serve hot.
Notes
Leftover smashed potatoes can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the air fryer or microwave until warmed through.
