Ingredients
  

Main Ingredients
  • 1 pound shrimp, peeled and deveined, defrosted if using frozen
  • 1 pound yellow squash or zucchini, cut into quarter-inch pieces
  • 1 green bell pepper, deseeded and sliced
  • 1 pound mushrooms, halved or quartered if large
Sauces and Oils
  • 4 tablespoons Tamari soy sauce or regular soy sauce Use regular if not gluten-free.
  • 2 tablespoons olive oil
  • 2 teaspoons sesame oil Adds nice flavor.
  • 1 teaspoon minced garlic
  • 1 teaspoon minced ginger
Optional
  • Easy Yum Yum Sauce Optional but highly recommended.

Method
 

Preparation
  1. Preheat the air fryer to 400 degrees F (200 degrees C).
  2. In a mixing bowl, combine shrimp, squash, green bell pepper, and mushrooms.
  3. Add Tamari, olive oil, sesame oil, garlic, and ginger to the bowl. Toss until everything is fully combined.
Cooking
  1. Place half of the hibachi mixture in the air fryer basket. Cook for 8-9 minutes, turning halfway through.
  2. Remove the cooked mixture and add the remaining shrimp mixture to the basket. Cook for another 8-9 minutes.
Serving
  1. Serve the air fryer shrimp hibachi as is for a low-carb meal or with some yum yum sauce on the side.

Notes

Ensure the shrimp is fully peeled and deveined for best flavor. Cut vegetables into similar sizes for even cooking. Don’t overcrowd the air fryer basket; cook in batches if needed. Don’t skip the sesame oil for added flavor.
