Preparation
  1. Wash and slice the potatoes thinly using a mandoline or knife.
  2. Soak the potato slices in water for about 30 minutes to remove excess starch.
  3. Drain and pat the slices dry with a towel.
  4. Preheat the air fryer to 360°F (180°C).
Cooking
  1. In a bowl, toss the potato slices with olive oil and salt (and any other desired seasonings).
  2. Place the potato slices in a single layer in the air fryer basket.
  3. Cook for 15-20 minutes, shaking the basket halfway through, until the chips are golden and crispy.
  4. Let cool slightly before serving.

Notes

For the best results, cut the potato slices evenly for uniform cooking. If making a larger batch, cook the chips in smaller batches to ensure even cooking. Store in an airtight container in a cool, dry place.
