Ingredients
  

For the marinade
  • 1/4 cup dark brown sugar
  • 1/4 cup gochujang chili paste Adjust for spice preference.
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil For extra flavor, drizzle more before serving.
  • 1 tablespoon rice vinegar
  • 2 teaspoons minced garlic
  • 1 teaspoon ginger paste
  • 1/2 teaspoon smoked paprika
For the skewers
  • 2 pounds skinless, boneless chicken thighs, cut into bite-sized pieces Can be replaced with chicken breasts.
  • Chopped green onions For garnish.
  • Toasted sesame seeds For garnish.

Method
 

Preparation
  1. Whisk together the brown sugar, gochujang, soy sauce, sesame oil, rice vinegar, minced garlic, ginger paste, and smoked paprika in a bowl.
  2. Add the chicken pieces and stir to combine until evenly coated. Cover and refrigerate for at least 1 hour.
Cooking
  1. Preheat the air fryer to 400 degrees F (200 degrees C).
  2. Thread the marinated chicken pieces onto skewers.
  3. Place the skewers in a single layer in the air fryer basket. Cook for 6 minutes, flip, and cook for an additional 6 minutes.
  4. Ensure the chicken reaches an internal temperature of 165 degrees F (74 degrees C).
  5. Transfer to serving plates and garnish with chopped green onions and toasted sesame seeds.

Notes

If you have time, marinate the chicken overnight for even more flavor. Soak the wooden skewers in water for about 30 minutes before using them to prevent burning in the air fryer. Adjust the amount of gochujang based on your spice preference.
