Preparation
- Gather all ingredients.
- Heat vegetable oil in a skillet over medium heat. Add diced onion and cook until soft and translucent, about 3 to 5 minutes.
- Add minced garlic and cook until fragrant, about 1 minute. Stir in chopped green chiles and Mexican tomato sauce.
- Add shredded chicken, Mexican cheese blend, and Neufchatel cheese; cook and stir until cheeses have melted and mixture is warmed through, about 3 minutes. Season with salt and pepper.
- Heat corn tortillas in a skillet or on grill until soft and pliable.
- Place 3 tablespoons of chicken mixture down the center of each tortilla, fold over, and roll into taquitos.
Cooking
- Preheat air fryer to 400 degrees F (200 degrees C).
- Place taquitos in a single layer in the air fryer basket and mist with avocado oil.
- Cook until golden brown, about 6 to 9 minutes. Turn taquitos over, mist with avocado oil, and air fry until crispy, 3 to 5 more minutes.
Serving
- Serve hot and crispy with your favorite dipping sauces such as salsa, guacamole, or sour cream.
Notes
Make sure not to overfill the tortillas to avoid a mess when rolling them up. Keep the tortillas pliable by heating them just before filling. Experiment with different types of cheese or add beans for extra flavor. For extra heat, consider adding jalapeƱos or more spices to the filling.
