Ingredients
  

For the Chicken
  • 2 pieces chicken breasts, boneless and skinless, 6-8 ounces each
  • 1 cup flour
  • 1/4 cup cornstarch
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 2 teaspoons smoked paprika
  • 2 teaspoons salt
  • 1 teaspoon chili powder
  • 1 teaspoon cracked pepper
  • 2 large eggs
  • 1 tablespoon hot sauce
  • 1 tablespoon water
  • 3 tablespoons buttermilk
For the Sandwich
  • 4 pieces sandwich buns
  • 4 tablespoons butter
  • 1/4 cup mayonnaise
  • Dill pickle slices

Method
 

Preparation
  1. Slice the chicken breasts in half to create smaller pieces. Pound them to an even thickness and pat them dry.
  2. In a shallow dish, mix together the flour, cornstarch, and seasonings.
  3. Dredge the chicken pieces in the flour mixture, shaking off the excess.
  4. In another shallow dish, whisk together the eggs, hot sauce, and water.
  5. Combine the buttermilk with the seasoned flour mixture until it becomes clumpy.
  6. Dip each chicken piece into the egg wash, then coat it in the clumpy flour mixture.
Cooking
  1. Arrange the chicken in an oiled air fryer basket and spritz them lightly with oil.
  2. Air fry at 400 degrees for 12 minutes, or until the internal temperature reaches 165 degrees. Check at 8 minutes to spritz with oil if needed.
Assembly
  1. While the chicken cooks, butter the sandwich buns and toast them in a skillet.
  2. Spread mayo on each bun and top with the chicken and pickle slices before serving.

Notes

To enhance flavor, marinate the chicken in buttermilk for a few hours before cooking. For a spicier kick, add extra hot sauce to the egg wash. Always check the chicken's internal temperature to ensure it is fully cooked and safe to eat. You can customize your sandwich by adding different toppings like lettuce, tomatoes, or cheese. For a healthier version, swap regular mayonnaise with Greek yogurt.
