Main ingredients
  • 2 pieces corn tortillas (gluten-free) Use any tortillas of your choice for variation.
  • 3 tablespoons guacamole Can be store-bought or homemade.
  • 1/3 cup cheddar cheese (grated) Feel free to use more cheese if you prefer.
  • 1/2 cup cooked chicken breast (cubed) Leftover or rotisserie chicken works well.

Method
 

Preparation
  1. Preheat your air fryer to 400°F (200°C).
  2. Take one tortilla and spread 1.5 tablespoons of guacamole on it.
  3. Evenly sprinkle half of the cheese on top of the guacamole.
  4. Add the cubed chicken breast on top of the cheese.
  5. Sprinkle the remaining cheese over the chicken.
  6. Spread the other tortilla with the other 1.5 tablespoons of guacamole and place it on top of the first tortilla, guacamole side down.
Cooking
  1. Carefully place the quesadilla in the air fryer basket.
  2. Cook for about 8 minutes or until the quesadilla is crispy and golden.
  3. Remove from the air fryer and let it cool for a minute before cutting into wedges.

Notes

Serve warm with additional guacamole, salsa, or sour cream for dipping. Store leftovers in an airtight container in the refrigerator for up to 2 days. Reheat in the air fryer until hot and crispy. You can make the quesadilla ahead of time and freeze it for up to 1 month.
