Preparation
- Preheat your air fryer to 400°F (200°C).
- Take one tortilla and spread 1.5 tablespoons of guacamole on it.
- Evenly sprinkle half of the cheese on top of the guacamole.
- Add the cubed chicken breast on top of the cheese.
- Sprinkle the remaining cheese over the chicken.
- Spread the other tortilla with the other 1.5 tablespoons of guacamole and place it on top of the first tortilla, guacamole side down.
Cooking
- Carefully place the quesadilla in the air fryer basket.
- Cook for about 8 minutes or until the quesadilla is crispy and golden.
- Remove from the air fryer and let it cool for a minute before cutting into wedges.
Notes
Serve warm with additional guacamole, salsa, or sour cream for dipping. Store leftovers in an airtight container in the refrigerator for up to 2 days. Reheat in the air fryer until hot and crispy. You can make the quesadilla ahead of time and freeze it for up to 1 month.
