  • 1/4 teaspoon Salt
  • 1/4 cup Cocoa powder for chocolate variation
Wet Ingredients
  • 4 large Eggs
  • 1 cup Sugar
  • 1/2 cup Milk
  • 1 teaspoon Vanilla extract
  • 1/2 teaspoon Almond extract
  • 1/2 cup Oil
  • 1 cup Pumpkin puree
  • 1/2 cup Marshmallow fluff
Fillings and Toppings
  • 1 cup Whipped topping
  • 1 cup Cream cheese for filling
  • 1/4 cup Brown sugar optional for filling
  • 1 cup Finely shredded carrots for carrot variation
  • 1/2 cup Holiday sprinkles for decorating
  • powdered sugar Powdered sugar to dust on top
  • Food coloring for decorating

Method
 

Preparation
  1. Whip eggs and sugar until light and airy.
  2. Gently fold in the dry ingredients and pour into a baking sheet.
  3. Bake until lightly golden, then roll while warm.
  4. Allow to cool, then fill with the appropriate filling for each cake.
  5. Top with powdered sugar or ganache as specified for each variation.

Notes

Be careful not to overmix the batter, as this can make the cake dense. Experiment with different fillings like fruit preserves, whipped cream, or cream cheese frosting to find your favorite combination. Roll the cake while it is still warm to prevent it from cracking.
